Easy Egg and Cheese Tarts

Thaw out 12 egg roll wraps
Prepare scrambled eggs mixture using 5 eggs, 1/2 cup milk, 1/2 tsp dill powder, salt and pepper to taste
Spray 12 muffin containers with olive oil spray
Fill each muffin tin with wrap
In each wrap add:
1 tsp canned sliced mushrooms
1 tbsp grated cheese
1 tsp diced chives

Top with scrambled egg mixture

Place in oven for ten minutes or until eggs are done. 

Great for kids lunches or to take on picnics or day trips

Blueberry Banana French Toast



1 banana
2oz fresh blueberries
1 egg
1/4 cup milk
1/2 tsp cinnamon (or more if you like cinnamon)
1 scoop vanilla sugar
Blend all ingredients in blender. Pour batter into flat tray. Dip both sides bread into batter. Fry in warm skillet with canola oil. (About 3 minutes per side). Makes four pieces of French Toast.

Serve with fresh blueberries, whipped cream or syrup

Shakshuka Hack – Healthy Breakfast Meal

Mornings aren’t always easy. Sometimes I want more than a smoothie or a fruit to get me through my day but don’t feel like overdoing the carbs. In Israel, a dish called “shakshuka” is a big thing. It’s basically tomato sauce with eggs poached directly in the sauce and cumin is usually the spice of choice. This morning I had fresh produce and was inspired to do something with them. That’s how I came up with this shakshuka hack. It took me one minute to wash and dice the veggies and then 5 minutes to cook everything in a pan. This recipe is for one but just add for each person. So simple.

Ingredients:

1 tbsp olive oil

1 tsp oregano

1 diced scallion

I diced small roma tomato

1 egg

Sprinkle of parmigiana cheese

Add all veggies and oregano to oiled pan. Sauté on burner on medium heat for two minutes. Break egg on top of sautéed veggies and cover pan with lid. Leave lid on for four minutes without removing and continue to cook on medium heat. The lid will keep the steam from the veggies contained and cook the top of your egg without having to flip it. It won’t be rubbery and the result will be a perfect egg. Sprinkle with fresh parmigiana cheese 🧀 Makes one serving.

Healthy Banana Bread

The problem with eating sugar is that the body responds by raising its levels quickly followed by a sugar low. If you replace refined sugars with natural products such as honey, maple syrup, sorghum or molasses, the body with not go through the highs and lows so drastically. Each natural product brings with it its own health benefits, and you will not need as much of them as you would sugar for sweetness.

Ingredients:

2 ripe bananas

1/2 cp liquid honey

2 medium sized eggs

1/4 cp canola oil

1 scoop vanilla sugar

1 tsp baking soda

1 and a 1/2 cp all purpose flour

1/4 tsp salt

Directions:

Preheat oven to 350F

Peel banana and mash with back of fork. Blend in with wet ingredients until all incorporated. Gradually add dry ingredients. Pour batter into loaf pan lined with parchment paper. Place into preheated oven and bake for 45-50 minutes. Toothpick should come out clean.

Banana-Blueberry Smoothie

You deserve to treat yourself to something fun and easy for breakfast. Why should healthy be so complicated? A lot of people right now are combining seeds and grains into their morning drinks. If you don’t have time for that, why not go for the simple solution? This morning, I too had dreams of stunning açai bowls. I had planned to take some yogurt and layer it so perfectly with strawberries and nuts or seeds in a row. Then life happened. My second thought immediately was to fry some potatoes with eggs. Then I thought to myself, “Why are you doing this to your body?” So I grabbed three ingredients and made this great smoothie. Your body deserves to be treated kindly. If you really want the potato and egg calories, feel free to add the ice-cream 🤗

Ingredients:

2 medium sized organic bananas

1/2 pint of blueberries

2 cups of milk

Directions:

Put into blender and serve.

Life doesn’t have to be complicated.

Homemade French Toast Sticks

Ingredients:

4 pieces sliced Challah

2 eggs

1/2 cp milk

1/2 tsp cinnamon

1 tsp sugar

Instructions:

Mix eggs, milk, cinnamon and sugar.  Take challah and cut into strips. Dip strips into egg mixture until lightly coated but not soaking.  Prepare frying pan with canola oil. Place one drop of egg mixture in centre of pan. When it starts to bubble, the pan is ready for the toast. Place strips into heated pan, let brown and turn over and repeat on other side.  Make sure to turn down heat as oil gets hot quickly and sticks will easily burn. Serve with honey, syrup, jam or dusting of icing sugar. A fun meal for kids!
