Apple Cinnamon Coffee Cake

3 cups flour

1/2 tsp salt

2 tsp. baking powder

3/4 c. sugar

1 and a 1/2 cup orange juice

2  large eggs

2 tsp. vanilla sugars

1/4 cup  canola oil

Filling:

2 medium apples, peeled and diced small

mixed with:

3 tablespoons granulated sugar

1 teaspoon cinnamon

Topping:

1/4 cup oil

1/4 cup brown sugar

2 Tbsp. flour

1 Tsp cinnamon

Glaze:

2 cups powdered sugar

3 Tbsp. Water

1 scoop vanilla sugar

Directions:

Mix wet ingredients and slowly add dry ingredients until completely blended. Place batter in 9×13” pan. Prepare peeled diced apples by mixing with cinnamon and sugar until apples are completely coated. Dollop filling and spread evenly over batter.

Combine topping ingredients. Pour topping onto batter and filling and take a knife, swirling it into the cake mixture. Bake for 45 minutes at 350F or until toothpick comes out dry. Let cool. Top with glaze. (can substitute soy milk for orange juice and adjust amounts of sugar for your taste)
